I think my current media server hardware is overkill. (Need suggestions for alternatives)

Pretty much the title. I'm using a gaming PC that's only one generation old. 5800X3D, 6700XT, 128gb ddr4 ram etc... I think this is over kill because all I run on it is HexOS, Jellyfin, Immich, and Tailscale.

I think I want to take the hardware and use it for another fun project like a duel PC in a single case. Moonlight into it so I can essentially run another OS I can open a window into.

Are there any good bang for you buck setups that can easily handle HexOS, Jellyfin, Immich, Tailscale, and maybe a small Minecraft server?
