Apparently if you create a 2-drive pool it's not expandable. You need to start with at least 3 drives to allow expanding your pool later on.

I don't know for sure how things work with disparate drive sizes, but one possibility is that only as much as the lowest capacity drive is available per drive.

I will have 3 to start with one running the os. So it should keep it expandable. And if I am limited to just the 6tb capacity I can grab and external housing for expansion

Storage devices in each pool need to be roughly the same size.

The OS boot drive cannot be used for a storage pool, it has to be its own device so for your case it would not work
