Just all round storage

For me this will be going on my recently retired PC. I built it 9 years with the forethought that it would become a storage server long term. 

Hence I got a big case with about 9 drive slots in it. The idea is that if fill them and use the storage for multiple uses at once. 

1 - store copies of movies/tv shows and run them using PLEX or a similar service. It is what I am doing right now from my main PC, but would be nice to offload that work to one that is dedicated to it. 

- So I think, don't actually know, that I will need to be able to dual boot into Windows so that it can support my nvidia graphics card to transcode the movies. Not sure if this can be done through a linux based os (again that is what Hex OS is? )

2 - backup my data from my PC, that is saved games and important documents (similar to how onedrive and google drive work)

2b - backup my cellphone data, specifically movies and pictures. So far I have been lucky with Google still providing unlimited (lower quality) storage for their Pixel line of phones but it seems they won't give back full quality photos and video storage. I would like to be able to back my data up for any future use. 

- would be great to offer this to my family, since one of them has specifically started buying externals because they maxed out their free Apple storage. 

3 - last but not least host a server for multiplayer games for my buddies. Have in the past would be nice have something dedicated for this system. 

 

One thing I would love to be able to do, is to have it automatically backup to an offsite storage. That is, I can setup a home PC at my siblings place, and they just mirror each other, and backup automatically overnight or something.
