If I'm going with the 5 drive setup and let's say that I got 4tb, how many tb i will end up with?

Hello everyone, I am setting up my first NAS and want to buy HDD, but I'm unsure how many drives I should get and what type of radis. Manly the NAS will be for PLEX and phone backups (me and my family), and probably home assist in the future. should I do a different pool one for backup and the other for Plex? Thanks a lot
